Gustum (Appetizers)

  • Fresh soft herbed cheese
  • Herbed focaccia
  • Olives
  • Cheese and rice stuffed grape leaves

Mensa Prima

  • Pork with salt and cumin, served with a sauce
  • Artichokes served with herbs
  • Cucumber salad
  • Barley polenta
  • Baked fish served with a sauce (if the market does not allow, chicken will be substituted)

Mensa Secunda

  • Stuffed dates/apricots with honey

Beverages:

  • Spiced wine (non-alcoholic)
  • Lemon water
  • Mint water

Note: nearly all dishes will include Red Boat fish sauce. This is a commercially available Vietnamese fish sauce that is as close to garum as I can get. It is made only with fish, no shellfish.

Please contact the feast cook directly with dietary concerns. If they know ahead of time they can make sure there are accommodations. Day of, the kitchen will do the best it can to make sure you can eat a full meal.
